Reminiscing about the fall…

All of this snow that is dumping miserable-ness all over my city is making me miss fall like crazy. Fall is nice enough to just wear a jean jacket and a cute sundress. It is filled with warm, savory flavors like pumpkin, cinnamon and apple. Therefore, it is only fitting that we share one of our favorite recipes with you: classic apple crisp.

Apple crisp is great for entertaining because it takes basically no time at all, always turns out great and makes enough for a large crowd. We made it for a Thanksgiving Round 1 potluck party we hosted at our apartment for all of our friends the weekend before Thanksgiving. Because we couldn’t be with all of our favorite non-biologicals during the actual holiday, we figured we might as well celebrate twice! Plus, who said Thanksgiving foods could only be had once a year?

Filling:
5 pounds apples
Grated zest of 1 orange
Grated zest of 1 lemon
2 tablespoons freshly squeezed orange juice
2 tablespoons freshly squeezed lemon juice
1/2 cup granulated sugar
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg

Topping:
1 1/2 cups flour
3/4 cup granulated sugar
3/4 cup light brown sugar, packed
1/2 teaspoon kosher salt
1 cup brown sugar oatmeal (we used Quakers brand)
1/2 pound cold unsalted butter, diced

This recipe was adapted from a Food Network recipe – we added brown sugar oatmeal instead of regular for a little extra sweetness and used a variety of apples instead of the recommended McIntosh. A college student budget meant that all of the apples were stolen from the dining hall (perks of having a large bag!).

Preheat the oven to 350.

Start by cutting up all of the apples into slices. I personally prefer thinner slices because they get a little softer in the oven and make it a little easier to serve.

Try not to eat too many of the apples. It will be tempting.

Mix the apples together with the rest of the filling ingredients. This part can get a little messy because it is a lot easier to coat the apples evenly if you mix it with your hands. A little unlady-like, but for this dessert it is most definitely worth it.

Next mix together the topping ingredients. A hand mixer works really well, or again getting down and dirty works just as well.

Finally, pour the apples into a 9×13 buttered pan and sprinkle (more like small globs) the topping on top. Don’t worry – it will spread a little during cooking.

Bake it in the oven for 1 hour. We recommend doing this right before your party starts so it both stays deliciously warm and fills your apartment with a wonderful apple cinnamon aroma. What better way to welcome your guests?

How to host a Football Sunday

With football season coming to an end, and the games increasing in viewership how can your domestic instincts not want to host your friends for the games. Even if you’re not a maj. football fanatic it’s an awesome way to invite people that are from different friends groups, and possibly different teams to get to know each other in a casual setting.

1. Have a signature dish – Ours is our famous nachos. Take some classic sour cream, diced tomatoes, green onions, red onions, blended cheese, and drizzled honey barbecue sauce. Then add the secret ingredient – Morning Star Spicy Black Bean Burgers. Chopped up, these are delicious and add a little bit of spice to your nachos, but not enough for it to overwhelm the faint-of-heart.

2. Have something else going on – Set up some drinking games within view of the game. Let’s face it, while some of us are huge football fans (yours truly), others can only pretend to understand what is going on for so long. Get a pong table going, throw a deck of cards on the table or bring out those classic board games.

3. Keep drinks simple – For the Super Bowl, we are breaking out a special drink for each team. Plus, you always need an ample supply of beer. It is football, after all.

4. Lots of seating – Rope some of your favorite guy friends into bringing their couch down from their apartment. Stadium seating anyone?
